Sea Salt ice-cream II July 1, 2009

So, june is finally over.. and now only 4 months and weather will try it’s best to behave. it’s unbelievably hot these days, breathing seems to be a very difficult task, and with humidity reaching 80% something should be done… and that something is making ice-pops. Because I’m extra lazy I started with something I made last year ” Sea-salt ice cream”. I didn’t change anyhing in the recipe I just added more salt this time, and this time I’m happy to report that it tasted alot better, it was sweet but then there is this hint of salt, fantastic!

P.S: I find adding the salt and colouring to the egg custard before mixing it with the egg whites much easier

it looks great, i never had the courage to try it again from the failed last time TAT! (i went easy on the salt and didnt beat the cream enough, so it came out flat and tasteless =_= )
how do you pull out the popsickle without pulling the stuck out of the cream that is stuck in the mold? >_>”

well I’m not sure about the cream, I add it to the milk and boil it rather than beating it, so it should go something like this:
- beat egg yolks with sugar
-boil milk and cream, or just milk and milk XP
- add to egg yolks
-put back on fire and cook
-cool, and meanwhile beat the egg whites
- add the egg custard
-freez XD and wait

I take out the molds 5 mins before eating, and I wait XDDDD<– had so many accidents where the stick came out with no yummies on it
